Why use 40 cloves when 100 cloves of garlic is even better? This is an incredible spread that also produces awesome garlic oil.
Trim the ends off of the garlic as well as any green or brown parts. Place the garlic and the olive oil in a sauce pan and bring to a simmer
Reduce to the lowest heat possible and cook for at least 2 hours
Allow to cool and pass the oil through a sieve to separate the oil from the solids
Optional: Add 2 tablespoons of butter to the warm garlic paste with a little salt for a super 100 cloves of garlic bread spread
